WINEMAKING: It all starts with grapes on the vine. The best plots are chosen and the grapes are harvested once they are properly ripe and of the optimum acidity.
The must is fermented with its lees in medium toast French oak barrels. This process takes place during 6 months and the wine is stirred daily (a practice known as bâtonnage) to pick up oak barrels aroma better. This interaction with lees creates extraordinary aroma and flavor compounds, palate weight and texture in the wine.
